What Does Cold-Processed Honey Mean — and Why Does It Matter?

Pick up almost any jar of honey from a supermarket shelf and it will look perfect. Golden, clear, smooth — almost too perfect.

That is exactly the problem.

What most people do not realise is that to achieve that uniform, glossy look, most commercial honey goes through a heating process that strips away much of what makes honey genuinely good for you. And that is where cold-processed honey tells a very different story.

First, What Is Cold-Processed Honey?

Cold-processed honey — sometimes called raw honey — is honey that has been extracted and filtered at or near its natural temperature, without being exposed to high heat during processing.

In our case at Honeyzzz, the process is simple by design: the honey leaves the hive, gets carefully filtered to remove large debris like wax or bee parts, and goes straight into the jar. No heating. No blending. No shortcuts.

What you receive is honey exactly as the bees made it — alive, dense, and full of everything nature packed into every drop.

What Happens When Honey Is Heated?

To understand why cold processing matters, you first need to understand what heat does.

Most commercial honey is heated to temperatures between 70°C and 80°C — and sometimes higher — for two reasons: it makes the honey easier to filter at high speed, and it delays crystallisation so the product looks cleaner on shelves for longer.

Sounds practical. But here is the cost:

Enzymes are destroyed. Raw honey contains naturally occurring enzymes like diastase and glucose oxidase, which support digestion and have antimicrobial properties. High heat breaks these down completely.

Antioxidants are reduced. The polyphenols and flavonoids in honey — the compounds responsible for many of its anti-inflammatory and immune-supporting benefits — are significantly diminished when honey is heated.

Pollen is removed. Pollen is one of the most important markers of honey’s authenticity and origin. Ultra-filtered commercial honey is often stripped of all pollen — which is also why it is nearly impossible to trace where it actually came from.

The natural structure is altered. Raw honey has a complex, living composition. Heat fundamentally changes that structure, turning something whole into something processed.

What Cold-Processed Honey Actually Contains

When honey is never heated, you keep everything intact. Every jar of Honeyzzz honey contains:

Why Crystallisation Is Actually a Good Sign

Here is something that surprises a lot of people: if your raw honey crystallises over time, that is not a sign that it has gone bad.

It is actually a sign that it is real.

Crystallisation is a natural process that happens when the glucose in honey separates from water and forms crystals. Processed honey, which has been heated and ultra-filtered, resists this process artificially. Raw honey, left at room temperature over time, will naturally crystallise — and that is something to be proud of, not worried about.

If you ever want to soften crystallised honey, simply place the jar in warm (not hot) water for a few minutes. The texture will return without damaging any of its properties.
